Dandelion Greens and Belgian Endive Salad


  • 1 cup of dandelion greens, cut into small pieces
  • A handful of Belgian endive leaves
  • 2-3 radishes, sliced
  • 1/2 avocado, sliced
  • 1 carrot, sliced
  • 1/2 cup cabbage, shredded
  • 1/2 -1 can sardines in olive oil
  • Handful of pistachio nuts

Toss together. Add salt, pepper, olive oil and balsamic vinegar as desired.

(We love avocados in my household – we each eat half of one minimally per day! I feel so fortunate to have access to amazing avocados year-round!)

Sardines– contain healthy fats and cholesterol that promote overall health. They also contain a low amount of mercury because they are so are low on the food chain.

(I like the sardines packed in olive oil from Trader Joes. I usually eat ½ a can and then refrigerate the rest. The olive oil gives my salad the dressing it needs. Feel free to add balsamic vinegar.)

Pistachios– Boost blood, brain, and skin health. One of the few nuts that contain all 3 macro-nutrients (carbs, fats, protein,) dietary fiber, many vitamins and minerals, and antioxidants.

A small handful adds great crunch to any salad!
